Cheese maker brings honor to Lynn Dairy, Inc.


It's nice to have a world champion in your corner.


It's particularly nice when your corner is an important local industry. That is the feeling at Lynn Dairy, Inc., where Dave Woellner world champion Colby cheesemaker, plies his trade. Woellner won his title last fall in Green Bay, in world championship competition sponsored every second year by the Wisconsin Cheesemakers Association. His entry scored 98 out of a perfect 100.


Woellner has been with Lynn Dairy, Inc. for the last four years. He is a resident of Neillsville.


His winning effort, also speaks well for the high standard of quality maintained in its plant by Lynn Dairy, Inc., which Kraft has recognized over the years for consistently high quality of production.
Lynn Dairy, Inc., is one of the modern cheese plants in a state in which dairy related industry is so very important. It is so because of the high standards set by members of the Schwantes family, which owns and operates Lynn. Each year there is some activity or undertaking designed to increase either the quality of its product, or the plant's capability--usually both.


In the year 1975 William Schwantes, president of Lynn, said that the plant has projected plans to triple the size of its cooler area to provide for 15 carloads of cheese. He explained that it requires 10 days for the 640 pound barrels of cheese to cool to the required 40 degrees Fahrenheit after it is made. The additional cooler space will provide amply for the space required for present prodution, and for future expansion.


Work on the new project is expected to get under way as soon as weather permits in the spring.


During 1974, Lynn paved a large 180 by 100-foot area between the plant and its large garage to reduce dust hazards and to increase the facility of keeping the plant and its surroundings in impeccable shape.
In addition to William Schwantes, other members of the family are active in the enterprise. His wife, Beverly, serves as vice president as well as family manager. His mother, Mrs. Ruth Schwantes, is active as secretary-treasurer. Billy, now a sophomore at the University of Wisconsin-River Falls, is taking agriculture-related subjects with an eye toward returning to Lynn Dairy on completion of his studies. Billy spends vacation time in the home plant during his period of schooling.


Other members of the Schwantes family include the eldest daughter, Sue, who is a student in dental hygiene at Marquette university; while Paul, eight and Patricia Lynn, five, are the favorite younger set of the family.
