Cheese Factory Upgrades (1973)

In recent weeks Lombard Cheese Factory has taken on a new appearance. A 6,000
gallon milk holding tank has been put into operation, along with a new
laboratory, 11,000 pound cheese vat, remodeling of starter room, remodeling of
milk intake room, remodeling of cream storage room, and general improvements in
the factory.
These improvements are all necessary in light of the changing standards in the
dairy industry. To keep up with the demand for specialty cheeses in the New York
and New England markets, the factory will be operating an 18 hour production day
and running a flush volume of 88,000 pounds of milk in the next few weeks.
These improvements not only benefit the factory, but increase community strength
by providing additional employment and a sound market for area dairy farmers.
