Holding wagons, waiting to be filled, can be seen at the left, rear of the facility and a conveyor belt for unloading trucks heaped with peas can be seen projecting from the roofed protection to the north side of the plant. Peas are a first-rate Wisconsin plant because they can be planted as soon as the ground can be worked in the spring, usually about three weeks before the last frost. They are harvested just as the seeds reach full size, or just before. After reaching full size, they lose their flavor. Peas have almost as much protein and energy as meat. They are an excellent source of vitamins A and C. Pea vines and pods are by-products of the canning industry and they were generally used as a valuable food for local dairy cows.

In the 1940's, when this factory was vacated, it was purchased by the Stewart brothers, who remodeled it and opened "Stewart's Redville Dairy" where fine Italian cheese was produced.

On the south side of the two story section of the building, was a conveniently positioned loading dock where countless pounds of smoked and aged "Provolone" was directly loaded into rail cars and shipped to the eastern states on east and west bound tracks.

The Stewart Brothers also enclosed the roofed structure in front of the old tracks (covering the conveyor), converting it to a garage where huge drum trucks delivered tons of fresh Wisconsin milk from the area farms for processing at the dairy.
